Slimming World Breakfast Muffins
I have been struggling with Slimming World recently I won’t lie.
I have just wanted to eat rubbish, sit and eat a tub of Quality Street or Roses and with two family birthdays in one week it has been hard to get back into the Slimming World mindset.
One thing I really struggle with is savoury snacks.
I can do fruit easily and use Hi For and Alpen bars for my sweet hits.
Savoury I struggle.
I saw this recipe on Instagram and decided to give it a go, for Syn Free Breakfast Muffins.
I chopped up some spring onions, ham, mushroom and peppers.
I sprayed two muffin tins with Fry Light, and placed all the chopped items into each muffin base.
I then used 6 eggs ( as the muffin bases were a bit deeper than I thought) I beat these with a fork and added a little salt and then poured this in to the muffin cases.
I cut a few tomatoes in half and placed half a tomato in the top of each of the mixtures.
These muffin trays were then placed in the oven at 190 degrees and I checked on them every five or so minutes. In total they took around 20 mins.
It really was that simple.

And they were so gorgeous when they were done.
These were so yummy, and really do hit the savoury hole that you need at different times of the day.
And are subject free and so easy to make, which means I will definitely be making them again.
