Baking Day

Yesterday we had a baking day.

Little man wasn’t feeling the school work that was set by his teacher, he was missing his friends and he was not in the right frame of mind to do anything.

So we had a read, then we decided to do some baking.

We read the recipes, he weighed out the ingredients and we got cooking.

We made meringues.

This is something I have never made before, and I was actually quite worried about making, for some reason I thought they were super complicated. Actually they aren’t that difficult at all.

If anything the biggest problem is the timing while you are cooking them

For the first attempt I was quite pleased with these meringues. Some are a little overcooked but everyone still seemed to like them.

I just need to work out the timings a bit better with our cooker and work out the exact time the meringues need to be in there for.

Secondly we then went on to make some of my childhood favourites.

Something my mum always made when I was younger.

Digestive chocolate tray bake. These are so easy to make and I haven’t made them for such a long time and have never made them with Boo before.

As soon as they were ready BB had one and straight away said these are Nannies biscuits.

These you don’t even have to bake.

Which makes them even better to make and so simple.

Boo loved doing these as he loved an excuse to go mad with the rolling pin and bash up all the digestives.

It was the perfect way to get out all his feelings.

These were a massive hit as they always are.

I definitely will be making these more often.
