A Healthy Lunch
I need to lose weight and am trying hard to stay healthy.
I don’t need a diet I need a life style change, but it is really hard. I don’t eat because I love food, I eat because I have to, in actual fact the only food that I actually like is chocolate, and cake and that is generally it.
I could happily eat it all day, there have been days when I have, but I know that I can’t however to go on a ‘diet’ that says I can’t eat it only works for a few days, and then I have a day where I literally just eat it all day.
I don’t need to restrict things I need to eat proper meals and try not to be so hungry in between them so that I don’t pick all the chocolate, and the sweet stuff.
Breakfast I can cope with I love a bowl of porridge and fruit, or yoghurts for breakfast.
Lunches I find really hard, I usually have a baby screaming and trying to think of something to then make really does fill me with dread. And to be honest I just grab something in the cupboard. I don’t put much thought into it and I just eat it, and continue to graze until tea time. I am then not hungry, so don’t finish my tea, and graze again on rubbish late at night.
I know my problems its just fixing them that’s the biggest problem.
Today I steamed some sweet potato and broccoli for Boo to have mashed for his lunch. I tried a little once it was mashed up and was pleasantly surprised. I am not a broccoli lover, years of having it boiled to its last inch of taste have put me off forever, but it is vegetable that I would like to eat more off. There really aren’t many vegetables that I don’t eat, so I do really try with broccoli, when I was pregnant with Boo I tried to eat more and more of it but I did struggle.
However mashed up with the sweet potato it was lovely.
So I had a brain wave, and decided that as I had so much mash I would try to make a sort of bubble and squeak, with the mash and a little cut up bacon in it as well, and serve it was cucumber, lettuce, tomato and some balsamic vinegar.

It was easy to make, and it tasted absolutely lovely, something that I will be making again. It was really easy, full of goodness and filling.
It was also something that I could eat even cold, which is always helpful with a baby around and Boo loved the sweet potato and broccoli mash as well.
Ingredients:
Sweet Potato
Broccoli
Bacon
Tomato
Lettuce
Cucumber
Balsamic Vinegar
Knob of Butter
Olive Oil
Method:
Peel and chop the sweet potato, add the broccoli and steam until soft.
Add the knob of butter and mash-up the broccoli and sweet potato.
Cook the bacon, either grill or fry, I grilled ours and chop of the excess fat and cut into small pieces.
Mix the bacon into the broccoli and sweet potato mash.
Using your hands roll the mash and bacon into balls and flatten.
Using a little Olive Oil fry the mash and bacon flattened balls for a couple of minutes either side, or until hot enough.
Serve with lettuce, cucumber, and tomato salad with a balsamic vinegar dressing.
