Toad In The Hole

Now we love food in this house, I am not a fantastic cook. But I love to try a recipe out whenever I can.

However out tastes do differ. I like vegetables and pasta, and fruit, Mr L is a meat man. Any kind of meat he will eat as long as meat is on the table he does not care. Although there is one meal that we all like and is a firm favourite in our house.

Toad in the hole, is something that we all love to an extent.

Now there is a story with toad in the hole in our house, we all love it but Baba doesn’t like the batter, he likes the sausages and he likes Yorkshire puddings but doesn’t like toad in the hole. I know strange and just like me I used to be the same when I was little. So we take out the sausages and then he eats them so we do all like the meal just in different forms.

It is an easy and quick recipe to do and I have always cooked the Jamie Oliver version of the recipe, with the batter mix and the onions included. It is delicious, there is nothing better than eating a big toad in hole on a cold winters evening.

Ingredients:

300ml semi-skimmed milk

3 eggs

120g plain flour

12 sausages

3 red onions

2 tablespoons of olive oil

Method:

Whisk the milk, eggs and flour together and season, and set aside.

Put your sausages in a roasting tray with the onions, peeled and cut into quarters. Put the tablespoons of oil over them and roast in a preheated oven at 190C/170C Fan oven/Gas Mark 5 until the sausages are sticky and brown.

Take the tray out and pour over the batter and bake for a further 25-30 minutes until the batter is puffed up and golden.

We always serve with gravy and peas and it is a fantastic quick and easy meal.
