Slimming World Ham, Mushroom and Onion Crustless Quiche
We have struggled to get back into Slimming World eating since we have been away.
It’s been super hard not to reach for just any food like we were when we were on holiday.
But I am determined to get some sort of system back and this weekend I made the Crustless Quiche for the first time.

I was surprised how easy it was, and how yummy it was hot or cold.
We all love quiche depending on the fillings and this is something I will definitely be making again.
The fillings you can play around with and change to what you want to include but the main quiche recipe is.
200g Plain Fat Free Cottage Cheese
4 eggs
80g Low Fat Cheddar Cheese, grated
Frylight
For the filling I added
Half a chopped onion
A handful of mushrooms
Some slices of ham
All chopped up and small.
To cook the quiche.
Preheat the oven to 170 for fan assisted ovens
Spray the quiche dish with some frylight.
Put in all the filling ingredients chopped up and small and put in the oven for a couple of minutes.
Add the eggs, cottage cheese and half of the grated cheese into a blender and blend until smooth.
Get the dish out of the oven
Top with the grated cheese, leaving a little behind for the top of the quiche.
Pour the blended mixture all over the filling, making sure everything is covered.
Sprinkle the remaining cheese on top.
Put into the oven for 40-45 minutes checking regularly.
When you can pierce the quiche and no liquid comes out the quiche is ready.
Allow to cool for 15-20minutes before cutting into slices.
This lasted us 2 days and as I said was yummy hot and cold.
If you are using the cheese as your Healthy Extras the quiche is free otherwise it is 12 syns for the cheese so each slice would be a syn.
We used the cheese as our healthy extra so that it was a syn free treat.
