Raisin Cake

Today is my dad’s birthday and it is Easter weekend in normal circumstances we would be down the beach in our caravan and at some point of the day probably lunch or dinner would be meeting up with all the family.

We aren’t doing any of that.

Even though the weather is gorgeous.

Instead in this crazy world we won’t be seeing them.

I have made sure I didn’t do all of their shopping until today so that I can at least drop his cards off at the door today and I decided to make a cake for his birthday as well.

Not the bog standard birthday cake but a raisin cake instead that I can leave at the door.

A super simple raisin cake, all I used was

3 eggs

6 ozs of flour, caster sugar, and butter

75g of raisins.

I chucked all of them into the mixer and mixed together.

Then baked in the oven at 180 degrees, we have a fan over for 25 minutes give or take a bit.

Until it was all cooked.

After it was cool I made some royal icing and drizzled it over the top.

Super simple and easy.

And hopefully it will taste lovely!
