Pinch of Nom Stuffed Meatballs

Yesterday I made some stuffed meatballs from the Pinch of Nom cookbook.

If you haven’t yet got this cookbook it is a great cookbook that is full of meals for the whole family that are all slimming friendly.

The picture doesn’t do the food justice as it really was lovely, although Boo didn’t like any of it! Which is never a surprise, BB, Mr L and I all loved them and I was worried that the meatballs only having three each weren’t going to be filling enough but actually they really were lovely and filling.

The meatball was a simple recipe with just lean mince, and mozzarella and an egg to combine them all. So were nice and simple to make.

The sauce I actually adapted from the recipe.

I did the sauce with a tin of chopped tomatoes, a splodge of tomato puree, some mixed spice, dried herbs, paprika and garlic granules, and then I chopped up an onion, courgette, carrot, pepper, and mushrooms. I cooked all the sauce for around 10-15 minutes and then mixed it up with the hand blender.

It was that simple, and actually really nice.

It tasted completely different on the meatballs, I was worried it was going to be a bit too strong when BB first tried it on the spoon, but when it was poured over the pasta and the meatballs it tasted a lot milder and it was really yummy.

It was nice to get in the kitchen as well and actually make something from scratch it is something that I haven’t done for a few weeks. And it was nice that everyone, except Boo loved it.

It is definitely one that I will be making again.
