Mini Lasagnes
If you read my blog you will know that I am trying for us all to be healthier, so I am trying my hardest to make proper home cooked meals. The other day I found a recipe for Mini Tacos, and decided to change it a bit and make some mini lasagnes for the family.

Ingredients:
Mince
Handful of Mushrooms
1 x Onion
2 x Tin of Chopped Tomatoes
8 Mini Fajita Wraps
Dash of Olive Oil
Cheese
Method:
I cut up the onions and mushrooms really fine, and put some olive oil in the pan and cooked the mince.
Once the mince was browned I added the onions and mushrooms, and two tins of chopped tomatoes and cooked until everything was cooked through.
I then grated some cheese ready for the baking.
I cut the wraps into four, and sprayed some cooking oil into muffin trays.
Into a muffin space I placed one-quarter of the wrap, a spoonful of the mince mixture, some grated cheese, and then another quarter of the wrap, a spoonful of mince mixture and some grated cheese.
I repeated this for all the muffin spaces.
Then I placed the trays into the oven and cooked at 180 degrees (fan oven) for around 18 minutes.
I then served these mini lasagnes with some salad.
These were absolutely gorgeous, they tasted just as good as a big lasagne and were wolfed down really quickly and were really filling. Mr L and I also think they will be super yummy if left to go cold.
This is definitely a recipe I will be making again as it is so quick and easy and something that we all loved to eat.
