#Meatmatters Challenge – Beef Meatloaf

We are all meat eaters in our house, and live of chicken, pork and beef variations of meals.

So when I was asked if I wanted to participate in the #meatmatters challenge, I jumped at the chance. I was gifted a £10 gift card for Tescos to go and buy ingredients to make a 30minute beef or lamb dish.

Now I personally don’t eat lamb so beef was the choice for us, and being that beef is a source of iron which helps reduce tiredness and fatigue, is naturally rich in protein and provides eight essential vitamins and minerals that support good health and well-being it was a choice I was very happy with. To be honest after reading that I was quietly impressed that we eat beef at least once a week.

I decided to make Slimming World meatloaf, as whoever reads this blog will know that Mr L and I have been following slimming world for nearly a year now and the meatloaf is a recipe that we can eat hot and also keep in the fridge for three days so perfect for Mr L and my lunch. As well as a main meal.

The ingredients that were needed were:

Low Calorie Cooking Spray

500g 5% fat beef mince

2tsp Garlic granules

1 small onion

1 carrot

1 courgette

2tsp of BBQ Seasoning

1 egg

2tsp of Tomato Puree

4tbsp Passata

1tsp Balsamic Vinegar

I already had the garlic granules, BBQ Seasoning and eggs at home. So I brought the rest of the stuff from Tesco’s with my gift card and it came to £10.05 in total.

(I only took a picture of one of the 250g of mince but I brought two and included two in the recipe)

This is a really easy recipe to make.

Preheat your oven to 180 degrees.

Finely chop the carrot and courgette and add to a big bowl

Then chop up the onion.

Add the onion, garlic granules, the BBQ Seasoning, the tomato puree, the Passata, the balsamic vinegar and the mince all into the bowl.

Beat the egg, and add to the bowl.

Mix all the ingredients together with your hands, ensuing you mix everything well.

Then spray a loaf tin with the low calorie spray and add the mixture to the loaf tin and put into the oven for 25 minutes.

It really is that simple.

Remove from the oven and leave to cool.

You can then cover them and chill them in the oven for up to three days.

This meatloaf is really yummy and is a great simple but tasty meal or lunchtime treat. The tomato puree and Passata give it a nice taste and makes sure the whole thing isn’t too dry and the courgettes, carrots and onions blend into the meatloaf really nicely, leaving the garlic and the BBQ Seasoning to give all the mince a lovely seasoning.

And the best thing is it is completely free on the slimming world eating plan as well. Which makes it even better.

You can have it as a meal with salad, and greens or as a snack or a lunch meal!
