Meal Planning Monday 23/11/2020 (On Thursday)

Well I am a tad late with this meal planning monday, but I did do the meal plan at the beginning of the week so I wanted to post a blog about it as actually it did help last week.

No we didn’t do every meal that I wrote down last week but it definitely did help with the planning for the week so I wanted to keep at it.

So last week on the menu we had;

Monday – Toad in the hole

Tuesday – Gammon Steak and Wedges

Wednesday – Beef and Mushroom Risotto

Thursday – Cottage Pie

Friday – Chicken Stirfry

Saturday – Steak and chips

Sunday – Roast Chicken

To be honest we had a couple of bad days as we had two days that we just weren’t home with appointments that over run.

So Tuesday and Friday we ended up with a takeaway and Sunday it was a picky tea not a roast as no one was in the move for it.

Wednesday we had the Gammon Steaks instead of the Risotto and Thursday instead of a cottage pie I made a tortilla lasagne which was a huge hit.

I didn’t really follow a recipe, instead I made the mince into a bolognaise sauce, and then used some wraps and layered the mince and wraps into a dish putting cheese on the top of each of the wraps and finishing with a top layer of a wrap and cheese.

It was a complete hit, and I regret not getting a picture now as it is definitely something I will make again.

So we didn’t totally follow the plan, and went badly off it a couple of times but it was nice to have some idea of what we were doing when.

This week is the beginning of two birthdays in two weeks so I knew there were some takeaway plans for the next couple of weeks, as really what else can you do for birthdays at the moment!

But apart from that we are eating things that are in the freezer to make space for a big food shop at the end of next week.

So this week the plan is pretty simple.

The filo slice on Monday was one of our quick meals that we do on occassion, a filo slice, layered in a sauce sometimes I use pizza sometimes I use bbq, grated cheese and meats on top Monday we had it nice and simple and just had ham, with chips and beans. It really is a quick tea.

Tuesday we had a chinese for Mr L’s birthday and actually it really wasn’t the best chinese so a bit disappointing. But it was nice not to cook!

This week we will be having cottage pie as we swapped that last week for the tortilla lasagne, but it is really a simple plan this week.

Hopefully for the next few days we will stick to the plan and next week will be another one that is a bit of a hit and mix plan, as we really want to eat a lot of what is in the freezer next week for a food shop next weekend.

I am hoping once we have got into a rhythm of following the meal plan for the week I can then get a bit more adventurous with our food and try a few new recipes over the next few weeks.

What have you been eating this week?
