Butternut Squash and Carrot Soup
As you know we are trying to eat better, eat clean. Not eat all the processed, fast, crap filled junk food that we have been eating, but to eat super good foods that are home-made and made by us.
For ages I have thought of making soups, it is something that I have never made before (I know shock horror) and I keep getting told how it easy it is and that I should just make them and see how it goes. Today I was stumped for lunch I knew the butternut squash needed to be eaten so I started preparing that and then realised I could make a Butternut Squash and Carrot soup.
I didn’t have a recipe for the soup though so I went to google and typed in Butternut Squash and Carrot soup and found this recipe and it seemed pretty easy.
I didn’t have any Olive Oil so I just put all the vegetables in together with the vegetable stock, cooked it all for 10-15 mins and the let it boil and put the lid back on and let it simmer for the next 30 mins.
It really was that simple.
Once the 30 minutes were up I blitzed the soup up and served it up straight away for Boo and I.

It was blooming lovely, Boo could not get enough of it, and had some of mine as well as his. He is obviously a butternut squash guy and we have lots left over for the next few days. Which is great for both of us at lunch time.
It is a great snack idea as well as meal. And something that you can have a little off if you get slightly hungry.
I was shocked at how easy it was to make and will be making some more soup in the future.
