A Curry-ish Lunch
It’s 10.30pm on a Sunday evening, and I suddenly realise Mr L has no Slimming World friendly lunch tomorrow and there is no food in the house.
After a quick raid and remembering that we already had some cooked pasta in the fridge I attempted to make a sort of curry for him.
I am not the greatest of cooks, sometimes experiments work, sometimes they don’t. But I knew that he needed something so was willing to give it a try.
And it actually turned out ok.
And passed Mr L’s taste test and was super easy to make and I have loads left over for me tomorrow and for him to have another meal on Tuesday.
It was a real chuck in and see meal:
One tin of Baked Beans (Free on slimming world)
One can of Passata (Free actually a speed food)
Mushrooms chopped up (Free also a speed food)
Onion chopped up (Free also a speed food)
Spinach (again a speed food)
Chopped tomatoes (free)
Cannelloni Beans (free)
Tomatoe puree just a squeeze (free)
And then a mass of spices all free:
Salt
Paprika
Cumin
Tikka
BBQ
Garlic
Method:
Chop the mushrooms and onions and then put all the ingredients in the pan, and cook through, leaving the spinach until last and then cook through some more.
I then added some of the sauce to the left over pasta and hey presto he has a meal for tomorrow, a free full of speed food meal and lots left over for more than one meal.
