Sweet Potato Curry

Tonight I made a Sweet Potato Curry.
I had forgotten to get any meat out today and have both the boys home and needed something a little easy to make as they had their dinner sorted.
I had a look at the Slimming World app for some ideas and there seemed a very simple and easy sweet potato curry on there that was no syns. I didn’t have everything that was needed so instead I went rogue with what I had and finished up with this.
Now I am not a big curry lover.
I could eat it but I didn’t overly love it.
Where as Mr L loved it and it is something that I will probably end up making him again as it really was very easy.
As it was a bit of a pot luck meal I didn’t measure anything I just threw stuff in the pan.
But if you wanted to try to recreate it it really is simple.
I peeled and chopped a sweet potato I used two but didn’t put them all in the curry and they weren’t the largest ones.
I put them into a pan and sprayed with garlic fry light and put them in the oven for 20 odd minutes until they were a little soft.
I then roughly chopped up a red pepper, a red onion and some mushrooms and fried them again with garlic fry light for a couple of minutes.
I then added some spices Turmeric, Tikka Spice, Cumin and some Parsley I just chucked some in a good sprinkling of all of them.
Then I added the passata.
I got the sweet potato out of the oven added this to the sauce and put in a covered dish in the oven to cook a little bit longer while the rice cooked.
Then served.
It really was that simple.
It will be a great lunch for Mr L as I wouldn’t eat it again so I can batch cook it and he can take it to work with him so it is something that I would definitely make him again.
And is something that is simple to make and great for your syns as well as it is Free!
