Soup is something that I never really make, and I am not really sure why, as it really is an easy thing to make, especially when you do it in the slow cooker.
I wanted to try a Butternut Squash Soup again, I tried this soup last year with just Boo and I and we both really liked it however Mr L and Baba hated it. This soup was done on the hob, so I thought I would try one in the slow cooker, for it to be different to last time, and because of Boo being ill it was easier to throw it all into the slow cooker.
This is literally what I did this time.
Everyone always tells me to just chuck anything into a soup recipe and it will be fine, so I thought I would follow that advice.
So I used…
1 Butternut Squash
1 Red Onion
Dried Mixed Herbs
I peeled and roughly chopped into cubes the Butternut Squash, Carrots, Onion and Red Onion and put it all in the slow cooker. I put in a couple of pinches of Dried Mixed Herbs and then sprinkled the chicken stock gravy granules over the cubes, before pouring boiling water over the whole ingredients with just enough water until it was covering everything in the slow cooker.
I then put the slow cooker on high and left it to cook for 6 hours.
After the six hours I turned off the slow cooker and then used a hand blender to blend all the ingredients up to make it into a soup.
I have to say it was a lot nicer than the previous attempt at this soup and I really preferred it in the slow cooker compared to doing it on the hob.
Mr L even ate it so that was a massive improvement.
It is one that I will be making again.
But will be doing it this way rather than the other, because it tastes nicer, it is quicker and it is much easier to make!
