I am not a great cook, but I like to try new things and do like to experiment with recipes.
One thing that we all love in our house is pizza, but it isn’t that healthy.
We have tried cauliflower pizza, and it was ok, but took a long time, and wasn’t really a quick and easy Pizza, so I have been on the look out for an alternative since.
The other day I came across a video on Jamie Oliver’s You Tube, Food Tube channel and it seemed the perfect pizza. So I decided to give it a try.
We all love pizza, but we do all like different toppings so it makes sense to make our own pizzas, and this seemed the perfect recipe to let the boys help with.
So I made the dough, which I actually doubled from the video.
3 cups of self-raising flour
1 mug of water
Pinch of salt
2 Tablespoons of Vegetable Oil.
I then divided the base into four, and Baba and I rolled out the pizzas.
I put the pizza into a cold frying pan and added the sauce onto the pizza base.
I made a sauce similar to the Hidden Vegetable Sauce in Jamie Oliver’s video but did my own version.
4 Garlic Cloves
1 Tin of Tomatoes
2 Tablespoons of Tomato Puree
750ml of Stock, I used Chicken Stock
I washed, peeled and roughly chopped all the vegetables and put them into the pan.
I poured in the tomatoes, and stock and let it simmer for 45 mins.
Once cooked I blended all the sauce until it was smooth.
I put a couple of spoonfuls onto each pizza base, and then we all chose our own fillings for the pizzas.
I cooked the pizza’s on the frying pans until the base was cooked, and then placed them under the grill to grill them until they were cooked through.
Boo had a simple cheese and pepperoni.
Baba decided to up the game and wanted a stuffed crust. He put a circle of cheese around the edge of his pizza and folded the dough around the cheese, he then did a mushroom, pepperoni, and cheese pizza, and it looked lush. The cheese crust was amazing.
I decided to go with the basic ham, mushroom and cheese. It was a gorgeous pizza.
Not to be outdone by Baba. Mr L decided to go with a stuff crust, with cheese and the sauce, and filled his pizza with cheese, ham, mushroom and cheese. It was a loaded pizza, but one that did look yummy I have to say.
All of the pizza’s were lush, and filling, Mr L even had some of his today for lunch and said it was really yummy cold as well as hot.
These pizza’s were amazing, super easy to make, and ones that we will be making again and again.
